Carlos and Elena at Don Quijote Restaurant have been pillars of the Valparaiso city community for many years. Not only do they pride themselves on building relationships and making people feel at home in the restaurant, but they also support students and Valparaiso University in various ways. Valpo students have been able to attend live flamenco performances at Don Quijote. The restaurant has provided scholarships to students studying Spanish, which have been used for summer internships as well as to offset higher education costs. If a faculty member has needed cultural resources, Carlos and Elena have been generous in sharing magazines, experiences and information. – Kat Peters
